My husband and I enjoy having soup and grilled sandwiches for dinner, especially in the winter. As a change of pace, sometimes we’ll have cheese quesadilias with our soup. They’re really quick and easy to make, and your kids will like them too.
Easy Cheese Quesadilias
Flour tortillas (any size)
butter or margarine
cheese of your choice
Heat a skillet (the size of your tortillas) over medium heat.
Butter one side of the tortilla and place in butter side down in the hot skillet.
Put some cheese over half of the tortilla and then fold over the other half on top. I used sliced pepper jack and shredded cheddar cheese on one, and shredded cheddar, mozzarella and some dill weed on the other.
Cook until bottoms are golden brown. Turn and brown the other side.
Remove to a plate and cut each in half.
Serve plain or with your favorite toppings like sour cream, salsa, taco sauce, guacamole, etc.
You can also turn these quesadilias into a quick meal by adding cooked chicken or beef.
