Single Serve Peanut Butter Pies

individual peanut butter piesSeveral weeks ago Kroger had Marie Callenger’s single serve desserts on sale, so I stocked up and bought the carrot cake, keylime pie, red velvet cake and coconut cream pie desserts. Each dessert included two servings…perfect for me and my husband.

marie callender containerI kept the containers knowing that I could reuse them to make my own single serve desserts. As a side note, I made the mistake of washing one of the lids in my dishwasher and it warped…ugh!

peanut butter pie close upWith company coming over for dinner I decided to make these individual peanut butter pies. I used the recipe from my Peanut Butter Pie post. I made the crust from Vanilla Wafers I had on hand, added the peanut butter filling and topped them off with some chocolate syrup, nuts and chopped mini Reeses cups. I put the lids on them and placed them in the freezer. Mmm, I can’t wait for dessert!

Hmm? Wonder what other single serve desserts I can make? Anyone have any ideas?


Microwave Banana Cream Pie

Microwave Banana Cream Pie

I had a couple of bananas that needed used up and some vanilla wafers, so I decided for dessert I would make a Banana Cream Pie with a vanilla wafer crust.  To speed things up I made the custard filling using the microwave. 


1/2 cup melted butter

40 Vanilla Wafers

3 tablespoons sugar 

Stir all the ingredients until well blended and press into a pie pan.

Bake for about 7 minutes in a 375 degree preheated oven.

Allow crust to cool before filling. 


1/2 to 3/4 cups sugar

3 tablespoons cornstarch

1/4 teaspoon salt

2 cups milk

3 slightly beaten egg yolks

2 tablespoons butter

1 teaspoon vanilla extract 

In a large microwaveable bowl, mix together the sugar, cornstarch, salt and 1/2 cup milk until smooth.   Stir in remaining milk.   Microwave on HIGH for 5 to 8 minutes or until thickened. Stir occasionally the last half of cooking. 

Beat a little of the hot mixture into the beaten egg yolks, then add the egg yolk mixture to the remaining hot mixture. Microwave on HIGH for 1 1/2 to 2 minutes or until thickened.   Stir occasionally. 

Blend in the butter and vanilla extract.   Slice 2 bananas in the bottom of the cooled crust and then pour the custard over the bananas. 

Place a piece of plastic wrap over the custard and put the pie in the refrigerator to chill.   The plastic wrap will prevent moisture from settling over the filling while it cools. 

To serve I added whipped cream and crushed Vanilla Wafers…it was goood!
